Entrepreneurial empowerment in higher education necessitates the provision of practical incubation spaces to transform theoretical concepts into tangible business skills. This community service program aims to establish a "Healthy Canteen" (Kantin Sehat) as a practical entrepreneurship laboratory for students of the Sanitation Study Program at Magetan Campus. Conducted through a Participatory Action Research (PAR) approach, the program involved 18 core student tenants and mapped the market preferences of 89 academic community respondents. The methodology encompassed needs assessment, product curation, hard-skill training in hygienic food production, and the implementation of a digital Point of Sale (POS) system for inventory management. The survey results demonstrated a significant market demand for specific localized products, primarily Ayam Geprek (59.6%) and Es Puter (28.9%), which informed the canteen's product strategy. The intervention successfully facilitated the opening of one integrated food court unit managed by the Student Cooperative (KOPMA). Students acquired experiential learning in maintaining food sanitation standards and operating the IPOSPRO digital transaction software. Despite operational challenges, including unstable institutional internet connectivity for cloud-based POS synchronization and time constraints due to dense academic schedules, the program effectively fostered an entrepreneurial mindset. In conclusion, the Healthy Canteen functions not only as an essential ecosystem for food security but also as an adaptive learning environment for digital-era retail management.
